Bananas: Tasty and Nutritious

Banana Cake

1 cup sugar
1/2 cup butter
2 eggs
3 tablespoons milk
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 very ripe bananas, mashed
1/2 cup chopped walnuts
Prepared powdered sugar icing

Heat oven to 350 degrees. Grease 9-inch square cake pan; set aside.

In large bowl, mix sugar and butter together until creamy. Add eggs and beat until smooth. Add milk and vanilla.

Into another large bowl, sift flour, baking powder and salt; mix to combine. Add to butter mixture and blend well. Stir in bananas and walnuts, mixing thoroughly.

Turn batter into prepared pan and bake for 55 to 60 minutes, or until toothpick inserted in center comes out clean. Cool completely, and then frost with powdered sugar icing and sprinkle with additional chopped walnuts, if desired.
