Celebrating Corned Beef

Corned Beef Hash

2 to 3 tablespoons unsalted butter
1 cup chopped onion
3 cups finely chopped cooked corned beef
3 cups chopped cooked potatoes
Salt and pepper

Heat butter in large skillet over medium heat. Add onion and cook until translucent. Stir in corned beef and potatoes. Spread flat in pan, pressing down slightly.

Increase heat to medium-high and let mixture cook without stirring. When mixture begins to sizzle steadily, use spatula to lift and see if bottom is browning. If so, flip and press down, and let brown on other side. (If mixture is sticking, add a little more butter.) Cook until nicely browned.

Season with salt and pepper, and serve hot.
