Frosted Honey Fruit Cookies Recipe

B. N., Nebraska 

1/2 cup unsalted butter, softened
1 cup brown sugar
1 egg
1/2 cup honey
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/2 cup buttermilk
1/4 cup raisins, dredged in a little flour
1 cup walnuts, chopped
1/4 cup unsweetened shredded coconut 

Cream butter and sugar; add egg and honey. Sift in flour, baking soda, salt, and spices, adding alternately with buttermilk; then add raisins, nuts, and coconut. Mix all together well and spread thinly in two well-buttered 8-inch-square baking pans. Bake at 375 F for about 20 minutes. While still warm, frost with:

1/2 cup confectioner’s sugar
Milk to make a thin, smooth paste
Few drops vanilla

Spread thinly over cookie and allow to cool. Cut in squares or diamonds to serve.
