Sweet and Smoky Beef Stew
• 2 tablespoons olive oil
• 3 pounds beef stew meat
• 1 yellow onion, finely chopped
• 3 cloves garlic, minced
• 1 quart salsa
• 2 cups beef stock
• 1/4 cup vinegar
• 1/2 cup packed brown sugar
1. Heat oil in a large skillet over medium heat. Add beef in batches, and cook until browned. Remove from skillet and transfer to a slow cooker.
2. Add onion, garlic, salsa, beef stock, vinegar and brown sugar to slow cooker. Cook on high for 6 to 8 hours, or until beef is fall-apart tender.
