Turkey and Wild Rice Soup Recipe

Yields 8 to 10 servings

After you’ve boiled the carcass and made stock, bring together this simple, hearty soup with the leftover meat. Freeze any extra for cold winter nights!

3 tablespoons butter
1 onion, chopped
2 celery stalks, chopped
2 carrots, peeled and chopped
2 garlic cloves, minced
8 cups turkey or chicken stock
1 cup wild rice mix (Lundberg)
2 tablespoons chopped parsley
4 cups cubed, cooked turkey

In large soup pot, melt butter over medium heat. Add onion, celery, carrots and garlic; sauté for 5 minutes.

Add turkey stock, wild rice mix and parsley. Bring to a boil, then cover and simmer for 1 hour. Add turkey and heat for an additional 5 minutes.
