A twist on traditional deviled eggs, these are filled with bacon and fresh herbs.
6 hard boiled eggs, peeled
3 wedges Laughing Cow Smooth Sensations Cream Cheese Spread in Classic Cream 1/3 Less Fat
3 tablespoons extra virgin olive oil
4 slices bacon, cooked and crumbled
1 tablespoon Dijon mustard
1 tablespoon minced fresh tarragon
1 tablespoon minced fresh dill
1 tablespoon minced roasted red pepper
Slice eggs in half lengthwise. Place yolks in mixing bowl. Set the whites on a plate and set aside.
Add remaining ingredients, except sea salt, to yolks. Mix with fork until evenly combined, breaking up egg yolks as you mix.
Spoon yolk filling into centers of egg whites. Sprinkle with crunchy sea salt. Refrigerate until serving time. Refrigerate any leftovers. Yields 12 servings.
