4 catfish filets, fresh or frozen and thawed
2/3 cup bottled Italian salad dressing
2/3 cup crushed saltine crackers
1/3 cup grated Parmesan cheese
1/4 teaspoon pepper
1/8 teaspoon ground red pepper
Place filets in shallow baking dish. Pour dressing over them. Cover and refrigerate for 30 minutes or overnight, turning once.
Heat oven to 375 degrees. Line baking sheet with foil; lightly grease foil.
In pie plate, combine cracker crumbs, cheese, pepper and red pepper.
With fork, remove filets from marinade and dredge in cracker mixture, coating well. Shake off excess coating and place on prepared baking sheet.
Drizzle with remaining marinade. Bake for 20 to 30 minutes, or until fish flakes easily when tested with a fork. Yields 4 servings.
