1 pound original or hot sausage roll
2 packages (20 ounces each) heat-and-serve macaroni and cheese
1 can (4.5 ounces) sliced mushrooms, drained
1 cup diced tomatoes
1/3 cup sliced green onions
2 tablespoons grated Parmesan cheese
Heat oven to 350°F. Grease 2-quart casserole dish; set aside.
In large skillet, crumble and cook sausage until browned.
In large bowl, combine sausage, macaroni and cheese, mushrooms, tomatoes and green onions. Spoon into prepared dish.
Cover and bake for 30 minutes, or until hot. Stir and sprinkle Parmesan cheese over the top. Bake, uncovered, for an additional 5 minutes. Let stand for 10 minutes before serving. Yields 6 to 8 servings.
