A simple recipe for homemade dinner rolls.
3 cups lukewarm water, divided
1 package yeast
1 cup lukewarm mashed potatoes
1 cup melted shortening
1 cup sugar
1 tablespoon salt
1 teaspoon baking powder
6-8 cups flour, divided
Combine 1 cup lukewarm water with yeast.
Combine potatoes, shortening, sugar, salt, baking powder, remaining lukewarm water and 3 cups flour; mix well. Add dissolved yeast. Let stand in a warm place for 30 minutes.
When light, work in enough remaining flour so dough can be handled and kneaded. The more you knead the dough, the finer and nicer the texture of the rolls. Cover and set in a warm place for about 2 hours, then punch down and let rise again.
Form dough into rolls, any shape you desire, and place on baking sheets. Let rise again, about 15 minutes. Put baking sheets into a cold oven and turn temperature to 400°F. Bake for about 25 minutes. Remove from oven and rub tops with a little butter. Yields about 3 dozen rolls.
