Breakfast Muffins

Muffins made with healthful blueberries are a great start to any morning.

Kansas Wheat Berry Muffins

2 eggs
1/2 cup butter, melted
1 cup sugar
1/2 teaspoon almond extract
1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups blueberries
1/4 cup sunflower seeds

In mixing bowl, beat together eggs, butter, sugar and almond extract. In separate bowl, combine flours, baking powder and salt; stir into egg mixture just until moistened. Gently fold in blueberries and sunflower seeds.

Fill paper-lined muffin cups three-quarters full with batter. Bake at 400°F for 20 minutes, or until muffins are done. Yields 20 muffins.

I tried this recipe and i am wondering why the dough was so stiff. should there have been more liquid? The flavor is great, but the blueberries did not mix in well, and the dough was really stiff
