MVP Chili Recipe

MVP Chili

 2 packages (19 ounces each) Johnsonville Hot Italian Sausage Links, casings removed
1 large onion, diced
3 cloves garlic, minced
2 tablespoons chili powder
1/4 teaspoon cumin
1 cup beef stock
1 can (28 ounces) crushed tomatoes
2 tablespoons tomato paste
Salt and pepper
1 can (15.5 ounces) black beans
1 can (15.5 ounces) red kidney beans
1 1/2 cups corn

In large pot, cook and crumble sausage links until nicely browned. Stir in onion, garlic, chili powder and cumin. Continue cooking until onion softens, about 5 minutes. Stir in beef stock. Simmer for 5 minutes, stirring often and scraping up any brown bits from bottom of pan.

Stir in tomatoes and tomato paste, and simmer, uncovered, for 10 to 15 minutes over medium-low heat, stirring occasionally. Season with salt and pepper. Stir in beans and corn. Simmer until heated through. Yields 12 cups.
