Protein abounds when you add popcorn fish to a lettuce salad.
1 package SeaPak Popcorn Fish
1 to 2 heads green leaf lettuce
1 red bell pepper
1 bag sliced carrots
Salad dressing of choice
Heat oven to 450°F. Bake fish according to package directions.
Cut lettuce and portion into 4 large bowls or 6 smaller bowls. Slice cucumbers and red bell pepper. Add to salad along with carrots. Top with fish, and serve with dressing of choice. Yields 4 large salads or 6 side salads.
