Versatile shrimp add nutrition and flavor to spaghetti.
1 package SeaPak Popcorn Shrimp
1 package (1 pound) spaghetti noodles
1 package (2 pounds) spaghetti sauce
1 medium zucchini, diced
1 medium yellow squash, diced
Shredded mozzarella cheese
Spinach leaves, for garnish, optional
Heat oven to 450°F.
Bake shrimp according to package directions. Cook spaghetti noodles according to package directions.
When spaghetti noodles have 7 minutes left to cook, add zucchini and squash to boiling water. Continue cooking for the final 7 minutes. Drain and set aside.
Pour spaghetti sauce into large pot; place over high heat. Stir occasionally until sauce begins to simmer. Add noodle mixture and stir to fully incorporate.
Arrange spinach leaves around edges of individual bowls, if desired. Spoon spaghetti into bowls and sprinkle with cheese. Top with shrimp. Serve immediately. Yields 4 to 6 servings.
