Ingredients

  • 1 egg
  • 1⁄2 cup milk
  • 1⁄4 cup coconut oil, melted
  • 1-1⁄2 cups flour
  • 1⁄2 cup sugar
  • 2 teaspoons baking powder
  • 1⁄2 teaspoon salt
  • 1 cup pitted cherries, fresh or frozen

Directions

  • Preheat oven to 400 degrees F. Line a muffin tin with cupcake liners, or spray lightly with nonstick cooking spray; set aside.In a large bowl, beat together egg, milk, and oil.In another large bowl, sift together flour, sugar, baking powder, and salt. Stir to combine. Add dry ingredients to egg mixture, and stir until just moistened. Gently fold in cherries.Spoon batter into prepared muffin tins, filling three-quarters full.Bake for 20 to 25 minutes, or until a toothpick inserted in center of muffin comes out clean.Cool muffins in pan for 5 minutes, and then remove to a wire rack to cool completely.Find more classic Capper's Farmer homemade breads in Easy Bread Recipes.
