Chocolate Aebleskiver Recipe

Airy and oh-so chocolaty, chocolate aebleskivers are a real treat.

Chocolate Aebleskiver Recipe

Yields 3 dozen

3 eggs, separated
2 cups half-and-half
1 2⁄3 cups all-purpose flour
1⁄3 cup cocoa powder
2 teaspoons sugar
1⁄2 teaspoon salt
1 tablespoon baking powder
1 teaspoon baking soda
1⁄2 teaspoon cinnamon
1 teaspoon vanilla extract
Coconut oil
Confectioner’s sugar

In large bowl, beat egg yolks with half-and-half.

In another bowl, combine dry ingredients; add to egg yolk mixture.

In small bowl, beat egg whites with vanilla until stiff; carefully fold into flour mixture.

Place 1⁄2 teaspoon coconut oil in each hole of æbleskiver pan and heat over medium heat. Fill holes 3⁄4 full of batter and bake. When half baked, turn with knife or knitting needle.

Dust with confectioner’s sugar and serve with homemade whipped cream.
