Ingredients
- 3 eggs
- 1 cup coconut oil, melted
- 2 cups sugar
- 2 cups grated zucchini
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄2 cup baking cocoa
- 1⁄2 cup chopped nuts, optional
- 1⁄4 cup chocolate chips, optional
- 1⁄4 cup dried cranberries, optional
Directions
- Preheat oven to 350 degrees F. Grease and flour 2 loaf pans; set aside.In a large bowl, beat eggs, oil, sugar, zucchini, and vanilla with an electric mixer until creamy.In another large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and baking cocoa; stir to combine. Stir dry ingredients into zucchini mixture. Add nuts, chocolate chips, and cranberries, if using.Divide batter evenly between prepared pans, and bake for about 1 hour.
