Roberta Duncan, of Kansas City, Missouri, requested a recipe for an easy-to-make cream cheese frosting, made with almond extract, like her mother used to make for frosting cinnamon rolls.
• 1⁄4 cup butter, softened
• 1 package (8 ounces) cream cheese, room temperature
• 1 cup powdered sugar
• 1 teaspoon vanilla or almond extract
1. In the bowl of a stand mixer (or in a large mixing bowl, using a hand mixer), mix together butter and cream cheese until smooth and creamy. Beat in powdered sugar. Add vanilla, and mix to combine.
2. Spread over cooled cakes, cupcakes, or cinnamon rolls.
NOTE: If frosting is too thick, add a little milk or half-and-half. If it’s too thin, add a little more powdered sugar.
