Rolled Oats Cookies Recipe

1 cup unsalted butter, softened
2 cup sugar
1 teaspoon baking soda
1/2 cup buttermilk
3 eggs, beaten
1 teaspoon vanilla
1/2 cup light corn syrup
2/3 cup cooked rolled oats
6 1/4 cups all-purpose flour, or enough for soft dough
2 teaspoons baking powder

Cream butter and sugar. Put baking soda in buttermilk and add eggs. Combine with butter and sugar and beat well. Add vanilla, syrup, and cooked oats, then sift in flour and baking powder. Roll thin, since oats have a tendency to make cookies puff up thick. Place on buttered baking sheets, sprinkle with granulated sugar, and bake at 425 F until just done.
