Yields 8 to 10 servings.
- 1/2 cup butter
- 1/3 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon paprika
- 3 cups milk
- 1/2 cup shredded American cheese
- 5 cups sliced potatoes
- 1/3 cup chopped onion
- Heat oven to 325 F.
- In a 12-inch cast-iron skillet, melt butter over low heat. Stir in flour, salt, pepper, and paprika. When edges start to bubble, slowly add milk. Cook, stirring constantly, until mixture thickens.
- Add cheese, and stir until melted. Stir in potatoes and onions.
- Cover skillet with foil, and bake for 70 minutes. Remove foil, and bake for another 20 minutes, or until potatoes are lightly browned.
