Stovetop Zucchini Bake
• 3 to 4 zucchini, sliced
• Oregano, to taste
• Basil, to taste
• Salt and pepper, to taste
• 1 1⁄2 cups fresh chopped tomatoes
• Grated mozzarella cheese, optional
1. Heat a skillet over medium heat. When warm, spray lightly with nonstick cooking spray.
2. Add zucchini, and cook until tender. Season with oregano, basil, salt, and pepper.
3. Add tomatoes, and heat until hot.
4. Top with cheese, if desired.
