Recipe for Sweet Potato Bread

For a special treat, try this homemade bread made with mashed sweet potatoes and chopped walnuts.

Yield: 2 loaves

Sweet Potato Bread


• 1 1⁄4 cups plus 2 tablespoons sugar, divided
• 1 1⁄2 cups cooked, mashed sweet potatoes
• 1⁄2 cup butter, room temperature
• 3 large eggs
• 1 1⁄2 cups all-purpose flour
• 2 teaspoons baking powder
• 1 tablespoon plus 1⁄4 teaspoon cinnamon, divided
• 1 cup milk
• 1⁄2 cup raisins
• 1⁄4 cup chopped walnuts


1. Preheat oven to 400 F. Lightly grease 2 loaf pans, and set aside.

2. In a small bowl, combine 2 tablespoons sugar and 1⁄4 teaspoon cinnamon; set aside.

3. In a large bowl, beat together remaining sugar, sweet potatoes, and butter until blended. Beat in eggs.

4. In another large bowl, combine flour, baking powder, and remaining cinnamon. Stir with a fork to blend.

5. Stir flour mixture into sweet potato mixture. Blend in milk.

6. Add raisins and walnuts, and stir just until blended. Do not overmix.

7. Divide batter evenly between prepared pans. Sprinkle cinnamon-sugar mixture over the tops.

8. Bake for 25 to 30 minutes.
