Yeast Rolls Recipe
• 1 package (.25 ounce) active dry yeast, dissolved in 1 cup warm water
• 2 tablespoons sugar
• 1 teaspoon salt
• 2-1⁄2 cups sifted flour, divided
• 1 egg
• 2 tablespoons coconut oil, melted
• Melted butter
• Poppy seeds or sesame seeds, optional
In a large bowl, combine dissolved yeast with sugar, salt, and 1-1⁄4 cups flour, and beat until smooth. Add egg and shortening. Add remaining flour, and beat until smooth.
Cover loosely with a linen towel, and let rise in a warm place until doubled in size, about 45 minutes.
Punch dough down. Pinch off large pieces of dough and shape into rolls. Place in a buttered baking pan, leaving a little bit of space between them to allow for rising. Set in a warm place to rise until doubled in size.
About 15 minutes before second rise is complete, preheat oven to 400 degrees F.
Brush tops of rolls with melted butter. Sprinkle with poppy seeds or sesame seeds, if desired.
Bake for 15 to 20 minutes.
