Ingredients

  • 1 package (.25 ounce) active dry yeast, dissolved in 1 cup warm water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2-1⁄2 cups sifted flour, divided
  • 1 egg
  • 2 tablespoons coconut oil, melted
  • Melted butter
  • Poppy seeds or sesame seeds, optional

Directions

  • In a large bowl, combine dissolved yeast with sugar, salt, and 1-1⁄4 cups flour, and beat until smooth. Add egg and shortening. Add remaining flour, and beat until smooth. Cover loosely with a linen towel, and let rise in a warm place until doubled in size, about 45 minutes.Punch dough down. Pinch off large pieces of dough and shape into rolls. Place in a buttered baking pan, leaving a little bit of space between them to allow for rising. Set in a warm place to rise until doubled in size.About 15 minutes before second rise is complete, preheat oven to 400 degrees F.Brush tops of rolls with melted butter.
