Corned beef and sauerkraut make an awesome sandwich.
Thousand Island dressing
4 slices rye bread
4 slices Swiss cheese
Sliced corned beef
Heat large skillet or griddle over medium heat.
Spread dressing on bread slices. Top each with a slice of cheese.
Top 2 with some corned beef, then a layer of sauerkraut, and a little more corned beef. Cover with remaining cheese-topped bread slices.
Butter outer facing sides of bread and grill in skillet until golden brown. Turn carefully, and continue grilling until second side is golden, about 15 minutes per side. Serve immediately. Yields 2 servings.
