1 1/2 cups of Eat Smart Beneforté broccoli florets
3 garlic cloves, peeled and thinly sliced
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon lemon juice
1 teaspoon lemon zest
3 tablespoons grated Parmesan
3 tablespoons toasted pine nuts
1 teaspoon chopped basil, optional
Heat oven to 425ºF.
In large bowl, toss broccoli with garlic, olive oil, salt and pepper. Spread mixture in a single layer on baking sheet. Roast for 15 to 20 minutes, or until crisp-tender, turning once during cooking.
Place hot broccoli in serving bowl. Add lemon juice and zest, Parmesan, pine nuts and basil, if desired, and toss gently. Adjust seasoning to taste. Serve hot. Yields 4 servings.
