Steamed Broccoli With Lemon And Garlic

This GRIT archives side dish recipe is light and healthy but completely delicious. It can be served with meat, pasta, fish or just eaten as a light meal alone. 

Steamed Broccoli With Lemon And Garlic

1/4 cup Lemon juice from concentrate
1/2 cup White cooking wine
1/4 cup Extra virgin olive oil
1/4 cup Finely chopped scallions
2 cloves Garlic, minced
1 teaspoon Thyme
2 tablespoons Fresh, chopped parsley
1/4 teaspoon Black pepper
8 cups Broccoli florets with 2-inch stems
In a small saucepan, combine lemon juice, wine, olive oil, scallions, garlic, thyme, parsley and pepper. Simmer 10 minutes.
In a large pot, blanch broccoli until just tender; drain. Return to pot; add lemon-garlic dressing. Simmer 2 minutes to coat broccoli well.
Note: This can be served warm, at room temperature, or cold. Makes 8 servings.
