Rice with vegetables is an easy, delicious side dish and pairs well with cooked meats.
This concoction of soup, rice and frozen vegetables makes a perfect side dish for baked chicken, fish or pork chops. Or make it a main dish by adding cooked, chopped chicken or turkey.
2 cans (10.5 ounces each) condensed French onion soup
1 cup uncooked converted rice
1 tablespoon olive oil
Pinch black pepper
1 cup frozen peas and carrots
In 2-quart saucepan over medium-high heat, bring soup, rice, oil and pepper to boil. Reduce heat to low. Cover and cook for 15 minutes.
Stir in peas and carrots. Cover and cook for an addition 5 minutes, or until rice is tender.
