Fresh and Tasty Coleslaw

This slaw is easy to make and adds a little zing to any meal.

2 pounds shredded cabbage

¼ cup grated carrot

3 tablespoons canola oil

3 tablespoons tarragon vinegar

¼ cup grated onion

2/3 cup mayonnaise

½ cup water

½ teaspoon salt

In a bowl, combine all ingredients; mix well. Cover and refrigerate overnight to allow flavors to blend together.

Mexican Salad

This zesty salad makes a festive meal or side dish for any Mexican fare.

1 pound ground beef

1 small bottle Catalina salad dressing

1 can Ranch-Style Beans®

Shredded lettuce

1 onion, chopped

1 cup shredded cheese

Brown ground beef; drain well. Add salad dressing and beans; simmer for 10 to 15 minutes.

Layer shredded lettuce in a casserole dish; top with beef. Sprinkle onion and cheese over the top. Serve immediately.

Rhubarb-Strawberry Salad

Spring is the perfect season for this delicious fruity gelatin salad.

1 package (6 oz.) strawberry gelatin

1½ cups boiling water

1½ cups rhubarb

1 can (8 oz.) crushed pineapple, drained

1 package (10 oz.) frozen strawberries, thawed

1 envelope whipped topping mix

1 package (4 oz.) cream cheese, softened

In a bowl, dissolve gelatin in boiling water. Add rhubarb, pineapple and strawberries; chill until completely set.

In another bowl, prepare whipped topping according to package directions. Blend in cream cheese, mixing well. Spread over gelatin mixture in bowl; serve.

Saucy Burgers

Chili sauce and horseradish give ordinary hamburgers a bold flavor.

1 egg, beaten

2 tablespoons chili sauce

1 teaspoon dried chopped onion

1 teaspoon prepared horseradish

1 teaspoon Worcestershire sauce

½ teaspoon salt

Dash of pepper

1 pound ground beef 

In a bowl, combine egg, chili sauce, onion, horseradish, Worcestershire sauce, salt and pepper. Add ground beef; mix well.

Form into patties and grill until cooked through. Serve on buns with your choice of toppings.
