- 3 to 4 zucchini, sliced
- Oregano, to taste
- Basil, to taste
- Salt and pepper, to taste
- 1 1⁄2 cups fresh chopped tomatoes
- Grated mozzarella cheese, optional
- Heat a skillet over medium heat. When warm, spray lightly with nonstick cooking spray.
- Add zucchini, and cook until tender. Season with oregano, basil, salt, and pepper.
- Add tomatoes, and heat until hot.
- Top with cheese, if desired.
