Ingredients
- 1 1⁄4 cups plus 2 tablespoons sugar, divided
- 1 1⁄2 cups cooked, mashed sweet potatoes
- 1⁄2 cup butter, room temperature
- 3 large eggs
- 1 1⁄2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon plus 1⁄4 teaspoon cinnamon, divided
- 1 cup milk
- 1⁄2 cup raisins
- 1⁄4 cup chopped walnuts
Directions
- Preheat oven to 400 F. Lightly grease 2 loaf pans, and set aside.
- In a small bowl, combine 2 tablespoons sugar and 1⁄4 teaspoon cinnamon; set aside.
- In a large bowl, beat together remaining sugar, sweet potatoes, and butter until blended. Beat in eggs.
- In another large bowl, combine flour, baking powder, and remaining cinnamon. Stir with a fork to blend.
- Stir flour mixture into sweet potato mixture. Blend in milk.
- Add raisins and walnuts, and stir just until blended. Do not overmix.
- Divide batter evenly between prepared pans. Sprinkle cinnamon-sugar mixture over the tops.
- Bake for 25 to 30 minutes.
