It doesn’t get much simpler — or tastier — than Baking Fish In Foil.

Recipe for Baking Fish in Foil

Yields 4 servings

4 fish fillets
4 teaspoons butter
Salt and freshly ground black pepper, to taste
2 teaspoons paprika
1 large tomato, chopped
1 onion, chopped
1⁄2 green pepper, chopped
1⁄2 medium cucumber, peeled and chopped
2 tablespoons freshly squeezed lemon juice
2 tablespoons parsley flakes

Heat oven to 350 degrees Fahrenheit.

Tear off 2 large sheets aluminum foil and place 2 fillets on each sheet. Top each fillet with 1 teaspoon butter, a sprinkling of salt and pepper, and 1⁄2 teaspoon paprika.

In medium bowl, combine tomato, onion, green pepper and cucumber; mix well. Divide and spoon mixture evenly over fillets. Sprinkle fillets with lemon juice and parsley flakes. Bring up ends of foil and seal tightly.

Place foil packets in shallow baking dish and bake for 30 minutes, or until fish flakes easily when tested with fork.

Note:If preferred, foil packets can be cooked on the grill for approximately the same amount of time.
