Delicious no matter how it’s served.
Get a dose of fruit and nuts for breakfast with a slice of Banana Bread.
1/2 cup butter or lard
1 cup sugar
3 eggs, beaten
2 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups mashed bananas
1 teaspoon vanilla
1 cup chopped nuts
In large bowl, cream shortening and sugar until fluffy. Add beaten eggs and mix thoroughly.
In separate bowl, sift together flour, baking powder, baking soda and salt. Add to creamed mixture alternately with bananas and vanilla. Stir in nuts.
Pour mixture into greased and floured 9-by-5-by-3-inch loaf pan. Bake at 350°F for about 60 minutes. Cool overnight before slicing.
To serve warm, simply microwave for a few seconds. Yields 1 loaf.
