Ingredients

  • 3 eggs
  • 1 cup coconut oil, melted
  • 2 cups sugar
  • 2 cups grated zucchini
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1⁄2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1⁄2 cup baking cocoa
  • 1⁄2 cup chopped nuts, optional
  • 1⁄4 cup chocolate chips, optional
  • 1⁄4 cup dried cranberries, optional

Directions

  • Preheat oven to 350 degrees F. Grease and flour 2 loaf pans; set aside.In a large bowl, beat eggs, oil, sugar, zucchini, and vanilla with an electric mixer until creamy.In another large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and baking cocoa; stir to combine. Stir dry ingredients into zucchini mixture. Add nuts, chocolate chips, and cranberries, if using.Divide batter evenly between prepared pans, and bake for about 1 hour.
