Danish Rice Pudding Recipe

You can sprinkle cinnamon on top of this sweet and simple Danish rice pudding.

During the Julbord, an almond is traditionally hidden in the bowl of rice pudding, and the diner who finds it receives a small prize or is recognized for having good luck.

Danish Rice Pudding Recipe

1 cup rice, uncooked
4 cups milk
1 1/2 to 2 envelopes unflavored gelatin
1/2 cup water
8 tablespoons sugar
1/2 teaspoon salt
2 cups whipped cream
2 teaspoons vanilla
1/2 cup chopped almonds (optional)

Cook rice in milk; bring to a boil and simmer for about 18 minutes.

Soften gelatin in 1/2 cup of water. Add softened gelatin, sugar and salt to the cooked rice. Cool.

Add whipped cream and vanilla. Put into a bowl and chill until fairly firm. Serve with a cold fruit sauce, or use a Danish dessert pudding mix for an excellent sauce. Sprinkle with nuts if desired.
