Easy Meatball Recipe

Meatballs with tomato sauce that have been cooked in a cast-iron skillet.

    Ingredients

  • 2 cups crushed cornflakes
  • 1⁄4 cup diced onion
  • 11⁄2 pounds lean ground beef
  • Dash of salt and pepper
  • 1 egg
  • 2⁄3 cup applesauce
  • 1⁄2 cup ketchup
  • 1 cup tomato soup
  • 1⁄2 cup water
  • 21⁄2 cups tomato juice

Directions

  • Preheat oven to 350 F.
  • In a large bowl, combine cornflakes, onion, ground beef, salt and pepper, egg, and applesauce. Mix well.
  • Shape mixture into 11⁄2-inch balls. Place in two 9-inch cast-iron skillets, and set aside.
  • In another large bowl, blend ketchup, tomato soup, water, and tomato juice. Pour over meatballs.
  • Bake for about 1 hour, or until meatballs are cooked through and tomato sauce is thickened.
