Breakfast burritos ready for the table in mere minutes.
2 flour tortillas (6-inch size)
4 strips fully cooked bacon or 2 patties fully cooked sausage, optional
2 tablespoons shredded cheddar cheese
2 tablespoons salsa
Line each of two 2-cup microwave-safe cereal bowls with a paper towel. Press tortilla into each bowl. Crack egg into center of each tortilla, and mix gently with fork to scramble.
Microwave on High for 30 seconds; remove and stir gently. Return to microwave and cook for additional 30-second intervals until eggs are cooked through.
Remove tortillas to flat surface. Top each with bacon or sausage, if desired, cheese and salsa. Fold bottom of tortilla over filling, then fold in each side. Yields 2 servings.
