Finnish Turnip Casserole Recipe

2 medium-sized turnips, peeled and sliced
Boiling, lightly salted water
1 cup dry breadcrumbs, divided
1 teaspoon salt
1 teaspoon nutmeg
3 tablespoons light corn syrup
1/2 cup cream or half-and-half
2 large eggs, beaten
4 tablespoons butter, divided

Cook turnips for about 30 minutes in boiling, lightly salted water until tender. Drain well and mash until smooth.

Preheat oven to 350°F.

Add 1/2 cup breadcrumbs, salt, nutmeg, syrup, cream, eggs, and 3 tablespoons of the butter to the mashed turnips and mix well. Spoon into a lightly greased 2-quart casserole dish. Top with the remaining butter and breadcrumbs. Bake for about 1 hour, until golden brown.
