Baked Buffalo Chicken
1/2 cup real mayonnaise
1/2 teaspoon cayenne pepper, or to taste
1/2 cup plain dry bread crumbs
1 tablespoon chopped fresh parsley
4 boneless, skinless chicken breast halves (about 1 1/4 pounds), cut into strips
Heat oven to 400°F.
Combine mayonnaise and cayenne pepper in small bowl; reserve half for dipping sauce.
Combine bread crumbs with parsley.
Coat chicken with mayonnaise mixture, then coat with bread crumbs. Arrange chicken on baking sheet and bake for 12 minutes, or until chicken is golden brown and thoroughly cooked. Serve with reserved dipping sauce. Yields 4 servings.
For a fun twist, and perfect as an appetizer, serve cooked chicken strips on wooden skewers.
