Mexican Sausage Pizza Recipe

Turn an ordinary weeknight meal into a pizza party that kids of all ages will enjoy.

Mexican Sausage Pizza

1 pound original or hot sausage roll
3 cups baking mix
2 cups grated cheddar cheese
5 to 6 tablespoons water
1 can (15 ounces) refried beans
1/2 cup chopped onion
1 cup diced tomatoes
1/2 cup minced cilantro
2 cups shredded Mexican-blend cheese
Sour cream
Salsa

Heat oven to 350°F.

In medium skillet over medium heat, cook and crumble sausage until brown; drain and cool.

In large bowl, combine baking mix, cheddar cheese and sausage. Stir in water and mix to form a soft dough. Pat out thin on a large baking sheet or pizza pan that has been lightly coated with nonstick cooking spray. Bake for 10 minutes, or until crust is light brown.

Spread baked crust with refried beans. Top with onion, tomatoes, cilantro and Mexican-blend cheese. Bake for an additional 10 to 15 minutes, or until cheese is melted.

Serve with sour cream and salsa. Yields 4 servings.
