Apple-Cabbage Slaw Recipe

This delightful version of coleslaw is light and creamy, with a slightly sweet flavor that’s sure to go well with most any main dish.

Yields about 10 servings.

Ingredients:

  • 1 small head cabbage, cored and thinly sliced
  • 1 small red apple, cored and chopped
  • 1 small green apple, cored and chopped
  • 1/2 small red pepper, chopped
  • 1 small carrot, shredded
  • 5 green onions, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/2 cup sugar
  • 3 tablespoons olive oil
  • 3 tablespoons vegetable oil
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon red pepper flakes

Directions:

  1. In a large bowl, toss together cabbage, apples, red pepper, carrot, and green onions. Set aside.
  2. In a small saucepan over medium heat, whisk together vinegar, sugar, oils, mustard, and red pepper flakes. Simmer until sugar is dissolved.
  3. Pour hot dressing over cabbage mixture, and toss to coat.
  4. Cover and refrigerate for at least 1 hour to allow flavors to blend.
