Ingredients
- 2 cups cooked, shredded chicken
- 1⁄4 cup chopped onion
- 2 cups water
- 1 teaspoon salt
- 1 cup uncooked rice
- 2 large carrots, diced
- 1⁄2 cup peas, optional
- 1⁄2 cup chopped green pepper, optional
- Shredded cheese
- 1 cup buttered breadcrumbs
Directions
- 1. In a skillet, combine chicken, onion, water, salt, rice, and carrots. Add peas and green pepper, if using. Cover and simmer for 30 minutes, stirring occasionally. 2. Preheat oven to 350 F. Lightly grease a 2-quart baking dish. Set aside.3. Add cheese to skillet, and continue simmering until cheese is melted.4. Transfer mixture to prepared dish, and top with breadcrumbs. 5. Bake for 20 minutes, or until breadcrumbs are golden.
