Leftover mashed potatoes become the crown of one extraordinary turkey pie.

Skillet Turkey Pie Recipe

Yields 4 servings

This simple take on a pot pie from GRIT’s archives uses just about all of your Thanksgiving leftovers in one dish.

2 tablespoons olive oil
1 pound leftover cooked turkey meat, shredded
1 cup frozen mixed vegetables (peas, carrots and corn)
1 cup turkey gravy
3 cups leftover mashed potatoes
1/2 cup shredded cheese, optional

Heat oven to 375 degrees Fahrenheit.

In heavy, medium-size ovenproof skillet, heat oil. Add turkey and frozen vegetables, and heat for a few minutes. Stir in gravy and heat for 1 minute.

In mixing bowl, combine mashed potatoes and cheese, if using. Carefully spread over turkey mixture in skillet.
