Preserving the fall harvest inspired Caroline Ables of Red Brick Farm to create a pear relish recipe. It’s a sweet accompaniment best paired with pork chops or served over chicken (and good enough to eat by the spoonful)!
Yields 10 to 12 pints
14 pears, cored and coarsely chopped
8 medium sweet onions, coarsely chopped
2 green bell peppers, seeded and coarsely chopped
2 red bell peppers, seeded and coarsely chopped
1 quart apple cider vinegar
1 1/2 cups sugar
1 tablespoon turmeric
2 tablespoons freshly ground black pepper
2 tablespoons salt
Pickling spice to taste
10-12 pint-size jars, ready to use
In a food processor, working in batches, grind the pears, onions, and bell peppers, 6-8 pulses. In a large pot, combine this mixture with the vinegar, sugar, turmeric, pepper, salt, and pickling spice. Bring to a boil over medium-high heat. Cook for 30 minutes, stirring occasionally.
Fill the prepared jars with relish and seal with lids.
