Sourdough Silver Dollar Hotcakes Recipe

Yields 16 (5-inch-diameter) hotcakes.

Ingredients:

  • 2 cups sourdough starter
  • 3 tablespoons oil
  • 2 tablespoons sugar
  • 1 egg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon warm water

Directions:

  1. In a large bowl, combine sourdough starter, oil, sugar, egg, and salt. Mix well. Set aside.
  2. Heat griddle to medium-high.
  3. In a small bowl, mix baking soda with warm water. Add to sourdough mixture, and fold gently until just combined. Do not beat or overmix. The sourdough should fill with bubbles and double in size.
  4. Using a 1/4-cup measuring cup, pour batter onto the hot griddle, and cook hotcakes until nicely browned on one side. Flip, and continue cooking until second side is browned.
  5. Serve immediately.

Note: The hotcakes should be cooked while the bubbles are still active, so begin cooking them as soon as the batter is mixed.
