Veggie Slaw Recipe

A cool, crunchy slaw will be the perfect balance for all those backyard barbecues.

Ingredients

    Dressing:

    •  3/4 cup canola oil
    • 6 tablespoons cider vinegar
    • 2 tablespoons sugar
    • 2 tablespoons coarse mustard
    • 2 tablespoons poppy seeds
    • 2 teaspoons celery seeds
    • Salt and black pepper to taste

    Vegetables:

    •  (or substitute 2 pounds precut slaw mix)1 head curly cabbage, shredded
    • 1 small head red cabbage, shredded
    • 1 pound carrots, shredded
    • 2 red, green OR yellow bell peppers, thinly sliced
    • 1 cup thinly sliced sweet onion

    Directions

  • Whisk together dressing ingredients.
  • Toss with vegetables; season to taste and marinate in refrigerator for at least 30 minutes before serving.These recipes are from the January 2006 issue of Heart of the Home.
